Nicko’s Pumpkin Soup

  • Nicko’s Pumpkin Soup 1 butternut pumpkin
  • 2 onions
  • 3 carrots
  • 4 potatoes
  • Salt & pepper
  • 1 litre water

Put water in a large soup pot, add salt and bring to a rapid boil. Peel all vegetables and chop up into cubes (roughly the same size so everything cooks evenly).

Place all ingredients and pepper in the pot and cook until soft and the water has turned a light orange (35 minutes). Using a electric mixer or a blender, blend ingredients until smooth.

Serve immediately with fresh crusty bread.


Donut Cookies

  • Donut cookies! 1/2 cup castor sugar
  • 2 tsp vanilla extract
  • 1/2 cup of milk
  • 50g melted butter
  • 2 cups plain flour (or SR flour for normal Donuts)
  • 2 tsp baking powder

Crack egg into a large bowl. Place sugar, vanilla extract and melted butter in the bowl and whisk until creamy. Pour milk, add the baking powder and sift the flour into the mix. Stir well.

Place mix in the fridge to rest for 30 minutes. Knead dough on a floured surface and then roll dough until 1cm thick. Using a cookie cutter and apple corer, make your donut shape.

Place on a baking tray and bake for 20 minutes or until golden brown. Cool.

If desired, mix 1 cup icing sugar with 2tsp water and mix well. Ice donuts with the mix and dip into 100′s & 1000′s or a cinnamon sugar mix.


Nicko’s Banana Bread

  • Nicko's Banana bread 2 & 1/2 cups SR flour (or plain with 2 tsp baking powder)
  • 1 cup brown sugar
  • 1 tsp ground cinnamon
  • 125g butter (melted)
  • 2 eggs
  • 3 bananas

Mash bananas and place in a large bowl. Place all other ingredients into the bowl and mix well. Preheat your oven to 180C.

Place mixture into a loaf tin, and place in oven for 30-35min. Serve with butter while still warm.

Chocolate Fudge

  • Chocolate Fudge 200g dark chocolate
  • 195g condensed milk
  • 60g butter

Place all ingredients into a microwave safe bowl. Microwave for 3 minutes or until chocolate has melted.

Line a baking tray with baking paper and pour mixture into tray. Place in fridge overnight and cut into squares. Serve with coffee or tea. ENJOY!


Nicko’s Nuggets

  • Nicko’s Nuggets 2 chicken breasts, skin removed and diced
  • 1 packet of potato chips (your choice of flavour)
  • 1 egg
  • 1 cup flour
  • Oil for frying (optional)

Cut breasts into large cubes. Crush potato chips until they become like breadcrumbs. Whisk egg and place on a plate.

Place flour and crushed chips on two separate plates as well. Line the 3 plates up together and place the chicken cubes in flour first (dust off excess), then egg, then chip crumb mixture.

Make sure the nugget is coated all over. Repeat this until all nuggets are coated. Place in a 180C Oven for 30 minutes or shallow fry them in some vegetable oil.

Serve with any sauce you desire. ENJOY!


Nicko’s Pineapple Cake

Nicko's Pineapple Cake Serves 12. Ingredients:

  • 4 cups self raising flour
  • 1 cup sugar
  • 2 cups crushed pineapple
  • 1 & 1/2 cups Milk
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg

Preheat oven to 180C. Combine all ingredients in a large bowl and stir. Pour into a baking tin of your choice (we used a Ring Tin) and place in oven for 30 minutes or until golden brown on top.

Serve warm or cold with custard or fresh whipped cream. ENJOY!


Nicko’s Scones

You probably don't need this much cream Serves 12. Ingredients:

  • 5 cups SR flour
  • 300ml cream
  • 300ml lemonade

Preheat oven to 180C. Combine all ingredients in a large bowl and stir until it forms a sticky dough.

Sprinkle flour on a board or workbench. Kneed dough until it forms a solid ball. Using a rolling pin, roll out dough until you have about a 1 or 1 &1/2CM thickness. Cut circles using a scone or cookie cutter. Place on a baking tray lined with baking paper, and bake for 25 min.

Serve hot with fresh whipped cream and a jam of your choice. ENJOY!
