Ingredients:
- 1kg mixed dried fruit
- 600ml choc milk
- 2 cups SR flour
- 100ml cherry brandy
Soak fruit in milk & brandy overnight or for at least 6 hours in the fridge. Mix in the flour.
Bake in a 20cm round cake tin (or a square tin – easier to cut for lunches) on 180C for 1 hour 15 minutes or until cooked.
The top started to get a little too brown so watch it towards the end. May need to cover it with some foil depending on your oven.
If you’re feeling creative, try it with iced coffee, banana milk and some chopped walnuts next time. Enjoy!
