Ingredients:
- 4 cups desiccated coconut
- 1 sponge cake (cut in two halves)
- 2 cups icing sugar
- 1/4 cup cocoa powder
- 3 tbls water to mix icing
Method:
Mix icing sugar, cocoa and water (add a few drops of rum or vanilla extract for extra flavor) until well combined.
Cut sponge into square shapes and roll in choc icing. Then roll in coconut and place on a plate and leave to set for 10 minutes. Serve with cream or jam. Enjoy!
