Here’s what you need:
- 4 potatoes, washed, peeled and cubed
- 4 rashes of bacon
- 2 tbs fresh mint, chopped
- 1/2 cup whole egg mayonnaise
Boil potatoes for about 7 minutes or until tender. Cool completely. Fry bacon in a non-stick pan and leave aside to cool. Chop mint and add to potatoes, add bacon and mayo. Mix well. Serve!
